From the kitchen of Mabel Knewasser. This recipe
is from Keebler. Though this coconut pie only
takes 5 minutes to put together, it takes about 4
hours in the freezer to firm.
3 oz cream cheese, softened
2 Tbsp sugar
1/2 c milk
Beat until smooth.
1 1/3 c coconut
1/2 tsp almond extract
8 oz tub Cool Whip, thawed
Pour into a pie crust (graham cracker or pastry).
Freeze until firm, about 4 hours.
When ready to serve, let stand at room temperature
for 15 minutes to make slicing easier. Store any
leftovers in freezer.
