From the kitchen of Diomira Putano.
Boil yellow squash for 2 minutes.
Cut in slices, not too thin, leave skin on.
Use Pyrex dish(es).
Combine:
1 c bread crumbs
6 Tbsp grated cheese
Dip squash slices in flour.
Then dip in beaten
egg.
Then dip in bread crumb mixture.
Don't cover.
Bake @ 375, 20 minutes.
Turn over & bake 10 minutes more.
