From the kitchen of Chris Lohman. This was in the first
family cookbook. Pasta with the flavors of Bruschetta;
tomatoes, mozzarella & fresh basil. You can play with the
proportions of the ingredients to suit you. We've thrown
marinated grilled chicken into this salad too.
1 packet Seven Seas Zesty Italian dressing mix
Follow the instructions on the package SUBSTITUTING
balsamic vinegar for regular vinegar.
1/2 tsp minced garlic (optional)
Cook to al dente:
1 box penne pasta
3-4 Roma tomatoes OR equivalent of cherry tomatoes,
Cut into small cubes:
5-6 oz block of part skim mozzarella
a bunch of leaves of fresh basil
Combine everything but dressing in bowl.
Toss with desired amount of dressing.
This batch was made with shredded cheese instead of cubes.
