From the kitchen of Tinky Burcin. This is my
recipe for Carrot Cake with Cream Cheese
Frosting.
Beat:
2 c sugar
3 eggs
1 1/4 c oil
1 tsp vanilla
Combine:
2 c flour
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 tsp cinnamon
Add dry & wet ingredients.
Add:
2 c grated carrots
8 oz crushed pineapple
1 1/2 c nuts (optional)
Put in 2 prepped pans.
Bake @ 350 for 1 hour
Frosting:
1/2 c butter
8 oz cream cheese
1 tsp vanilla
1 lb confectioner sugar
