From the kitchen of Carla Wilson. These little
individual cheesecakes are great at a party buffet. I
serve them in cupcake papers.
24 cupcake papers
24 vanilla wafers
2 pckg cream cheese (8 oz each)
2 eggs, beaten
3/4 c sugar
1 Tbsp lemon juice
1 tsp vanila
Place 1 vanilla wafer in bottom
of each cupcake paper.
Fill half full of cream cheese mixture.
Bake @ 350 for 15-20 minutes.
Open a can of cherry pie filling.
Place about 1 Tbsp of filling
(enough to cover top)
on each small baked cheesecake.
