From the kitchen of Jaime Barkwell. Serve these with mashed
potatoes. To be "very Dutch" make Dutch Meatballs & serve apple
canned whole beets (NOT pickled)
apple cider vinegar
salt & pepper
Shred beets into a pan (drain most juice).
Splash in a few Tablespoons apple cider vinegar (maybe 1/4 c?)
Add a little salt & pepper.
Add a couple Tablespoons sugar.
Cover & simmer 10-12 minutes.
