From the kitchen of Ann Marie Barkwell. This is best with small
zucchini or yellow squash. Large zukes may have tough skins. If
you are using large zucchini, cut out and discard the seeds. I
make this on the George Foreman Indoor Grill.
red or yellow peppers
Brush to coat with olive oil.
If using an outdoor grill, put zukes on aluminum foil that was
sprayed with cooking spray.

In addition to zucchini and yellow squash, I also make red and yellow
peppers this way. Onions and cherry tomatoes are good too.
Larry uses a generous amount of garlic powder instead of onion powder.
Carrots also grill nicely.
