From the kitchen of Stephanie Knewasser. I found
this recipe at Chocolate-Covered Katie. Once I
tried it, I was hooked. What makes it different from
an ordinary bowl of oatmeal? Three things. [1]
Lots of liquid. 1 part oats to 4 parts milk/ dairy
substitute. [2] The oats are cooked TWICE [3]
Vanilla, cinnamon & nutmeg.
In a large pot over med-low heat:
1 c oatmeal
2 c water/ milk/ silk/ dairy substitute/ any combo
Stir & cook until most liquid is absorbed, about 5
minutes.
Add:
2 c milk/ silk/ dairy substitute
1 tsp nutmeg
1 tsp cinnamon
2 Tbsp vanilla
1/4 c brown sugar
1/4 c raisins
Bring to a boil.
Reduce heat to low & cook, stirring occasionally,
until desired consistency, about 20 minutes.
