From the kitchen of Kay Putano. This oatmeal cake is topped with
brown sugar, coconut and chopped nuts.
CAKE
In a bowl stir together:
1 c rolled oats
1 1/2 c boiling water
Set aside to cool.

Cream together:
1/2 c butter
1 c brown sugar
1 c sugar
2 eggs
Add oats.
Add:
1 1/2 c flour
1/2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt

Bake @ 350, 45 minutes

TOPPING
5 Tbsp butter
1/4 c milk
1/2 c brown sugar
1 c coconut
1/2 c nuts, chopped
1 tsp vanilla
Mix together.
Spread on cake.

Bake @ 250 until light brown.
Watch closely.
