From the kitchen of Stephanie Knewasser.  Red
Velvet Cookies are a perfect addition to a
Christmas cookie tray.  Red velvet cake is
traditionally topped with cream cheese frosting, but
I want a cookie that doesn't need refrigeration, so I
use
cookie frosting.
Cream:
1/2 c butter
1/4 c crisco
1 c sugar
1/2 c brown sugar

Add:
1 egg
2 tsp vanilla

Add:
2 1/2 c flour
3 Tbsp cocoa
1 tsp baking powder
1/4 tsp salt
1 tsp red food coloring
1 tsp milk

Roll into walnut sized balls.
Place on a cookie sheet lined with a Silpat.*

Bake @ 375 for 10-11 minutes.
Let set 2 minutes before moving.

Frost with
Cookie Frosting or Cream Cheese
Frosting
.  Top with sprinkles.

Makes 40 cookies.

* I haven't tried baking these
without a Silpat.  So if
you don't have one, I'm not sure if you need to
grease the pan, or maybe they won't stick... I  don't
know.
"The longer you wait for the future
the shorter it will be."
What's a Silpat?
