From the kitchen of Stephanie Knewasser. Red
Velvet Cookies are a perfect addition to a
Christmas cookie tray. Red velvet cake is
traditionally topped with cream cheese frosting, but
I want a cookie that doesn't need refrigeration, so I
use cookie frosting.
Cream:
1/2 c butter
1/4 c crisco
1 c sugar
1/2 c brown sugar
Add:
1 egg
2 tsp vanilla
Add:
2 1/2 c flour
3 Tbsp cocoa
1 tsp baking powder
1/4 tsp salt
1 tsp red food coloring
1 tsp milk
Roll into walnut sized balls.
Place on a cookie sheet lined with a silicone baking
mat or parchment.
Bake @ 375 for 10-11 minutes.
Let set 2 minutes before moving.
Frost with Cookie Frosting or Cream Cheese
Frosting. Top with sprinkles.
Makes 40 cookies.
