Russian Coffee Cake
From the kitchen of Emily Putano.  Nice for a brunch
or with a cup of coffee or tea.  This was in the first
Family Cookbook.  After making it, I made 2 changes,
reducing the cinnamon sugar and the icing to the
amounts shown below.
Mix together:
 1 c oil
 1 c sugar
 4 eggs
 1 tsp baking powder
 1 tsp salt
 2 c flour
Pour half of batter into a greased 9x13 pan.

Spread with:
 
1 can favorite pie filling
Put rest of batter on top.
Sprinkle with:
 1-2 Tbsp cinnamon sugar

Bake @ 325, for 1 hour
or until toothpick comes out clean

Glaze:
 
1/2 c powdered sugar
 1-2 Tbsp water
 1/2 tsp vanilla
Combine & drizzle across top of cake.
