| Sandwich Cookies |
From the kitchen of Connie Putano. Two cookies
sandwiched together by jelly. The color peeps out the
hole. Nice on a Christmas Cookie Platter. Use a mini
heart cutter for Valentines Day. May want to double the
recipe.

Cream:
1/2 c butter or oleo
1/3 c sugar
Add:
1 egg YOLK
1 tsp vanilla
Add:
1 1/2 c flour
1/2 tsp salt
Roll dough flat.
Use a whiskey glass, or round cutter of that
size, to cut circles.
Make a "window" in half of them using the small
end of a funnel.
Bake at 375 for 8-9 minutes.
Cool.
Sandwich solid & window cookies with
Raspberry Jelly.
Just before serving dust with
Confectioner Sugar.
Makes 23 2 1/4" cookies
