From the kitchen of Ann Marie Barkwell. The original recipe
included a sour cream dip: 8 oz sour cream, 1/3 c fresh
cilantro (or parsley), 1/2 tsp chili powder.
Toss to coat:
2-3 large sweet potatoes, cut, unpeeled, into wedges
2 Tbsp olive oil
3/4 tsp salt
1/4 tsp pepper
Put on a 13x9 pan, lined with foil, dull side up
In a bowl combine:
1/4 c orange juice
1 1/2 tsp chili powder
1/2 Tbsp honey
Set aside.
Bake @ 450, 25-30 minutes, uncovered
Baste with o.j. mix , approximately 3 times, turning
wedges to coat.
