From the kitchen of Ann Marie Barkwell. After making
a turkey, use the carcass to make this simple soup.
meaty turkey carcass
2 celery stalks
Bring to a boil.
Simmer for 1 1/2 hours.
Strain in colander, then strain with strainer.
Keep meat from bones.
When jelled, remove fat from top.
To broth add:
meat from bone
reserved carrots, sliced
2 stalks celery, sliced
additional carrots, sliced, if desired
Add to broth.
Cook until warmed through.
May freeze at this point.
