From the kitchen of Stephanie Knewasser.  I received this
recipe from my neighbor, Nancy Thorner.  Not only are
they a good  way to use up ripe bananas, they're good for
you!  Applesauce is used instead of margarine.
Mix:
¾ c. brown sugar
½ c. unsweetened applesauce or 1/2 c butter
1 ½ c. (3 medium) mashed ripe bananas
2 eggs
1 tsp. vanilla
2 c. whole wheat flour
1 tsp. baking soda
¼ tsp. salt

Fold in:
1 FULL cup of regular choc. chips

Heat oven to 350.
Spoon into muffin pan (use liners or spray).
Bake 20-25 minutes or until light golden brown.
Makes 12.
