Biscotti
From the kitchen of Ann Marie Barkwell.  Plain basic
biscotti.  These are hard dunking cookies.  Enjoy with a
hot cup of coffee.
Beat:
2 eggs

Add:
1/4 c sugar
1/4 c oil
1 tsp lemon extract
2 1/2 tsp baking powder
1 1/4 c flour + 2 Tbsp

If dough is too soft add 1-2 Tbsp flour.
Drop onto a greased pan.
Using oiled hands, shape into a log.

Bake @ 350
12-14 min

Take from oven, slice,
transfer slices to clean pan,
cut side down.

Bake for approx. 12 min.

Turn over & bake 6 more min.
