From the kitchen of Ann Marie Barkwell. Chicken
Piccata is an Italian dish made by dredging thin
pieces of chicken in a seasoned flour, then cooking
in a butter sauce. It's been a family favorite for a
very long time.
1 Tbsp lemon juice
In separate bowl mix:
1/2 c flour
1/4 tsp garlic powder
1/4 tsp paprika
4 boneless chicken breast halves (cut into thin
in egg mixture.
Then dip in flour mixture.
In skillet, brown chicken in:
1/4 c butter, margarine OR olive oil
2 cubes chicken bouillon (2 tsp)
1/2 c boiling water
2 Tbsp lemon juice
Add liquid to chicken in skillet.
Simmer 20 minutes.
