From the kitchen of Stephanie Knewasser. A rich
appetizer of bacon, chicken, ham and cheese.
chicken breasts
sliced deli ham
cheddar cheese slices/cubes
bacon, cut in half
2-3 Tbsp olive oil
chicken broth
1/2 tsp salt
1/2 tsp pepper
Flatten chicken to 1/4 inch.
Cut into 1 1/2 in strips.
Place ham & a piece of cheese on strip.
Roll up. Wrap with a piece of bacon.
Secure with a toothpick.
In a large skillet cook chicken roll ups in oil
until bacon in crispy, about 10 minutes.
Add broth, salt & pepper.
Bring to a boil.
Reduce heat, cover & simmer 10-15 min
or until juices run clear.
Serve warm.
