From the kitchen of Brian Barkwell. Take it up a
notch by adding fresh mint leaves or chopped
In a pan:
3-4 raw beets
enough water to cover bottom of pan
Cover tightly with foil.
Bake @ 375, for 1 hour
It's done when the skin peels off.
Peel skin off.
(mostly) red wine vinegar
(little) olive oil
fresh mint leaves
