From the kitchen of Stephanie Knewasser. These
huge hearty peanut butter oatmeal cookies are a
great on- the- go breakfast or snack.
In a large mixer:
4 Tbsp butter, softened
1/4 c apple sauce
1 c brown sugar
1 c peanut butter
Add:
2 eggs
1/3 c water
2 tsp vanilla
Add:
1 tsp salt
2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/2 c flour
1 c whole wheat flour
3 c oatmeal
Add:
1 c mini chocolate chips
Lightly grease cookie sheets.
Drop dough by level 1/4 CUP.
The dough is easy to work with,
neaten edges so smooth & round.
Bake @ 350, for 16-17 minutes.
Let set a minute or two before moving cookies from
tray to cooling rack.
Makes 22 huge cookies.
