From the kitchen of Steve Barkwell. I found this
recipe at allrecipes.com. It can be filled with a
variety of fillings. I like cherry pie filling or apple pie
filling.
In a large bowl, whisk:
1 c flour
2eggs
Gradually add:
1/2 c milk
1/2 c water
Add:
1/4 tsp salt
2 Tbsps butter, melted
Beat until smooth.
Heat a lightly oiled 8 1/2 or 9 inch pan over medium
high heat.
Pour 1/4 c batter onto the pan.
Tilt the pan in a circular motion to coat the bottom
of the pan evenly.
Cook the crepe 2 minutes or until the bottom is light
brown. Loosen with a spatula, turn and cook the
other side.
Fill with cherry pie filling or filling of your choice.
Serve hot.
