From the kitchen of Stephanie Knewasser.  Made on the
stovetop, these cookies are like chewy rice krispy treats,
only with dates
, maraschino cherries and coconut.
In a 10 inch skillet melt over med heat:
1 c butter
Stir in:
1 c
brown sugar, firmly packed
8
ounces chopped pitted dates
Remove from heat.
Stir in:
1 egg
Return to medium heat, stirring constantly until it comes to a
full rolling boil, about 4 - 6 minutes.
Boil 1 minute, stirring constantly.
Remove from heat.
Stir in:
3 c Rice Krispies cereal
1 c shredded coconut
1/2 c maraschino cherries, drained & chopped
1 Tbsp vanilla
Stir until moistened.
Let stand 10 minutes.
Shape into balls.

Roll balls in:
2 1/2 c shredded coconut
