From the kitchen of Kay Putano. Chocolate
cupcakes with a cream cheese filling topped with
chopped pecans.
Cupcakes:
Mix together:
1 1/2 c flour
1 c sugar
1/4 c cocoa
1 tsp baking soda
1/2 tsp salt
Add:
1 c water
1/3 c oil
1 Tbsp vinegar
1 tsp vanilla
Mix until well combined.

Filling:
8 oz cream cheese
1 egg
1/3 c sugar
1/8 tsp salt
Beat well.
Add:
1 c chocolate chips.

Bake @ 350, 30 to 35 minutes.
Makes 21 cupcakes or 36 mini cupcakes
