From the kitchen of Stephanie Knewasser. I created
this chocolate muffin recipe after my doctor put me
on a low sugar/ low carb/ high veggie diet. I was
craving chocolate cake and I'm happy to say these
muffins satisfy my cravings without the "bad
numbers" of traditional chocolate cake.
Mix:
1/3 c sugar
1/2 c oat flour
1/2 c whole wheat flour
3 Tbsp cocoa
1 Tbsp chia seeds*
3/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1 egg
1/4 c oil
1/4 c applesauce
2 tsp vanilla
1 tsp cinnamon
1/4 tsp nutmeg
1 1/4 c zucchini, grated
Scoop into greased muffins tins.
Bake @ 375 for 14 minutes
or until toothpick inserted comes out clean.
