From the kitchen of Kay Putano.
Dough:
Mix:
1 c sugar
1 c shortening
2 eggs
1/2 c milk
1 tsp vanilla
Add:
1 tsp baking soda
2 tsp cream of tartar
1/2 tsp salt
3 c flour

Filling:
In a pot:
1/2 c sugar
2 Tbsp cornstarch
Add:
1 c chopped dates or raisins
3/4 c water
dash of lemon juice (optional)
Cook on low heat, stirring constantly, until thickens.

Place half of dough on floured board.
Roll out to 1/4" thick.
Cut with cookie cutter.
Place tsp of filling in center of cookie.
Cover with another cookie.
Pinch edges shut with floured fork.

Bake @ 350 until VERY lightly browned.
