From the kitchen of Kay Putano. The full name of this recipe
is "John's Favorite Pot Roast (Mayor of Monticello)." This
recipe can be made with brisket, rump roast or eye round.
In large skillet or Dutch oven, brown:
1 - 2 Tbsp oil
3 lbs brisket, rump roast or eye round
1 large onion, sliced
Add:
1 package dry beef soup mix (onion or mushroom)
2 c water
1/2 c dry red wine
1/4 c teriyaki sauce
2 Tbsp brown sugar
Simmer, covered, 2 - 3 hours or until tender.
Add:
4 - 8 carrots, cut lengthwise
12 oz fresh mushrooms, sliced
Simmer 30 minutes or until vegetables are tender.

If desired, thicken juices with
1 1/2 Tbsp cornstarch mixed
with
1/4 c water.
