From the kitchen of Stephanie Knewasser. We
don't have a boat, but we enjoy fishing. On one of
our charters, we were given this recipe by the
captain. It's Scott's favorite way for me to prepare
egg(s), beaten, add a little milk if needed
Saltines, Ritz or Club Crackers
Salt & Pepper
Put fish in a bowl. Cover with milk.
Let set while you prepare the rest.
Put crackers in a food processor.
Pulse into crumbs.
Put crumbs in a bowl.
Dip the fish in the egg wash.
Coat in crushed crackers.
Repeat the egg wash and coating of crumbs so the
fish is double dipped.
Heat oil in a pan over medium to med-high heat.
Fry the fish until golden. Turn.
When it flakes easily, it's done.
Season with salt & pepper.
This batch was coated in Saltines. It's even better with Ritz.
