From the kitchen of Kay Putano.  New Country
Pie has a ground beef "crust" rice filling and is
topped with cheddar cheese.
Crust
1/2 c Hunts tomato sauce
1/2 c bread crumbs
1 lb ground beef
1/4 c onion, chopped
1/4 c green pepper, chopped
1 1/2 tsp salt
1/8 tsp oregano
1/8 tsp pepper
Combine well.
Grease a 9" pie plate.
Pat meat into bottom and up sides, pinching to
form one inch fluting around edges.

Filling
1 1/3 c minute rice
1 c water
1 1/2 c Hunts tomato sauce
1/2 tsp salt

Pour over meat crust.
Cover with foil.
Bake @ 350, 25 minutes.
Uncover.
Sprinkle
over top:
1 c cheddar cheese, grated
Bake 10 to 15 minutes longer.

Makes 6 servings.
