from Aethenos Feta. I've adapted it. Add more of what you
like to suit your tastes. This simple healthy dish was a
favorite meal when I was pregnant.
Cook 1 c pasta, according to directions.
Meanwhile, cook 1 box frozen spinach, according to
While pasta & spinach are cooking, chop:
3 plum tomatoes
3 green onions
Drizzle with 1/2- 1 Tbsp olive oil.
Crumble 1-2 oz feta over top.
Generously season with salt & pepper.
The salt & pepper make a big impact in this dish, don't skip.
