From the kitchen of Ann Marie Barkwell. I started
making these white cupcakes in the 60's
and sold
them
at a local restaurant.
Grease & flour 13x9 pan or 2 round 8" or 9" pans or
cupcake pan.

Beat on low until combined, scraping sides down to
ensure all is incorporated:
2 1/4 c cake flour, sifted
1 1/2 c sugar
3 1/2 tsp baking powder
1 tsp salt
1/2 c shortening
1 c milk
1 tsp vanilla
Beat 2 minutes on high.
Add:
4 egg whites (1/2 c)
Beat 2 minutes on high.

Bake @ 350
Round Pans 30 - 35 minutes
13 x 9 35 -40 minutes
