From the kitchen of Diomira Putano. These tasty beans
can be made any time of year, but it's traditional to serve
them at Christmas. This is a 2 day recipe.
Cover with water and soak OVERNIGHT:
1 lb northern or little white beans
Boil water & beans for 15 minutes.
Throw out water.
Boil again with 10 c clean water for 15 minutes, KEEP
In a stainless pan:
7 Tbsp oil
garlic - 2 or 3 cloves, sliced
Let garlic color a little, then remove.
whole medium onion - I like sweet onion
celery, big pieces - 2 or 3 stalks
1 1/2 - 2 tsp salt
1/2 tsp pepper
Cover with water from beans.
Let boil slowly - about 1 hour or until beans are of desired
consistency (I like beans soft and falling apart).
Add more water from beans as needed.
Remove celery and onion.
Add salt and pepper to taste.
