From the kitchen of Steve Barkwell. I got this recipe from
Peggy Bailey. I make my own Bisquick. Everyone liked it
when I used Mexican cheese blend.
ICombine in a large bowl:
4 c diced zucchini
1 medium onion, chopped fine
1 large fresh tomato, diced
1 1/2 c dry Bisquick
2/3 c grated cheese, I use whatever is in the fridge
1 tsp salt
1 tsp oregano
1/4 tsp pepper
In a separate bowl, beat together:
1/2 c oil
Add to veggie mixture.
Put in a greased casserole dish
Bake @ 350, 45 minutes or until nicely browned on top.
