When the garden is overflowing with zucchini,
it's time to make bread. To make it healthier,
reduce oil to half a cup and add half a cup of
applesauce. It freezes well.
1 c oil
2 tsp vanilla
2 c sugar
1 1/2 tsp salt
1 1/2 tsp baking soda
3/4 tsp baking powder
1 tsp cinnamon
3 1/2 c flour
2 c grated, raw, unpeeled zucchini
1/2 c walnuts or pecans, chopped
Grease & flour bread pans.
Bake @ 350 for 1 hour
