From the kitchen of Kay Putano. This zucchini
bread recipe includes pineapple, dates, raisins
and nuts.
Beat well:
3 eggs
Add:
1 c oil
2 tsp vanilla
2 c sugar
Add:
1 tsp salt
2 tsp baking soda
1/4 tsp baking powder
1 1/2 tsp cinnamon
3/4 tsp nutmeg
3 c flour
Add:
2 c grated, raw, unpeeled zucchini
8.25 oz can crushed pineapple, well drained
1 c dates or raisins
1 c walnuts or pecans, chopped
Grease & flour 2 9" x 5" bread pans.
Pour batter in pans.

Bake @ 350 for 1 hour.
