From the kitchen of Kay Putano. Mary Kneebis
gave me this recipe. Unlike most zucchini
bread, this contains coconut, oatmeal and
ginger.
Beat well:
3 eggs
Add:
1 c oil
2 c sugar
Add:
1 tsp salt
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp ginger
2 c flour
Add:
3 c grated, raw, unpeeled zucchini
1 c oatmeal
3/4 c coconut
3/4 c chopped nuts
Grease & flour 2 large bread pans.
Pour batter in pans.

Bake @ 350 for 1 hour.
