From the kitchen of Kay Putano. This zucchini cake can
be made in an 8" square pan or 2 loaf pans.
Combine:
4 eggs
1 1/2 c sugar
1 1/2 c oil
3 c zucchini (grated, do not peel)
3 c flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon (or replace some with
nutmeg)
1 tsp salt
1 c nuts, chopped
Pour into an 8" square pan or 2 loaf pans.

Bake @ 350, 45 minutes - 1 hour.
