From the kitchen of Stephanie Knewasser. I started
with Aunt Diomira's Dollar Pancake recipe & made a
few changes in an attempt to make them a little
healthier. I love them smothered in fruit.
Combine in a bowl:
3/4 c milk (I use skim)
3 Tbsp butter, melted
1/2 c flour
3/4 c ground oatmeal*/ oat flour
2 1/2 tsp baking powder
3 Tbsp sugar
1/2 tsp salt
1 tsp chia seeds (optional)
Beat well until smooth.
Use a spoon to drop a small amount of batter on a
heated & oiled pan. Cook over medium heat. Flip
when edges begin to look dry. Reduce temperature if
they are browning too quickly.
Try them topped with fruit. I microwave fresh or frozen
strawberries/ blueberries until they begin to juice.
Apples also make a great pancake topper. Core, skin
& slice thin. Microwave until softened.
Drizzle syrup (I use light) over everything & enjoy.
* To make ground oatmeal, put oatmeal in a food
processor and pulse until the oatmeal resembles
flour. Measure after processing.
Oatmeal Pancakes with strawberries and syrup. During u-pick season,
I pick oodles of strawberries. To save strawberries for muffins and
pancakes, I cut them into tiny pieces, lay them on a silicone baking mat
& freeze. Once frozen solid, I toss the strawberries into freezer bags.
