From the kitchen of Renee Wilson.  This amazing stuffing is what
Renee prepares every year at Thanksgiving.  The oat apple bread
makes it special.   Be sure to look over her
Turkey & Gravy recipes.
In a medium skillet, over med-low heat, melt:
2 Tbsp unsalted butter
Add:
1/2 c leeks, finely chopped (white & tender green parts)
1 medium carrot, finely chopped
1 medium celery rib, finely chopped
Cover & cook stirring occasionally until tender, about 10 minutes.
Season with:
1/4 tsp salt
1/4 tsp pepper
Transfer to a large bowl.
Add:
10 Tbsp unsalted butter, melted
6 c Wegman's Oat Apple bread (about 11 oz)
1 1/2 c turkey stock/ broth
1/2 c raisins
1/2 c toasted & coarsely chopped walnuts
1 1/2 tsp poultry seasoning
Mix well.
