Applelasses Cake

There's no need to frost this moist cake of molasses, nuts & apples. The flavors embody autumn.



Combine in sauce pan & cook until tender:

2 1/2 c pared, sliced apples

1/4 c water

1/4 c molasses

Cool. Set aside.

In mixer combine:

2 1/2 c flour

1 1/2 tsp baking powder

1 tsp salt

1/2 tsp baking soda

1/2 tsp cinnamon

1 c sugar

1/2 c oil

1 egg

Mix well.

Drain apples, RESERVE THE LIQUID.

Combine liquid with milk to make 3/4 c.

Add to mixer.

Gently fold in apples.

Place in greased 13x9 pan.

Topping:

1/2 c sugar

1 tsp cinnamon

2 Tbsp butter, melted

Combine topping & sprinkle over cake.


Optional:

sprinkle 1/2 c chopped walnuts over top.


Bake @ 350 for 30-35 minutes
