balsamic VINAIGRETTE (salad dressing, NOT vinegar)
Place a heaping spoonful of apricot preserves on boneless chicken breasts in a glass pan.
Fold chicken breast in half (so the apricot is in between).
Drizzle balsamic vinaigrette all over folded chicken.
Bake @ 350, 40-50 minutes.
