Breaded Smelts



From the kitchen of Diomira Putano.

This has been served for years as part of the Feast of the Seven Fishes, an Italian Christmas Eve celebration. Aunt Kay & Christa fry them in oil. The photo to the right shows them fried, not baked.



Rinse 1 lb small smelts


Combine in a bowl:

3 large eggs

1 small egg

1 tsp garlic powder

3 tsp parsley

salt & pepper

Set aside.


Combine in another bowl:

1/4 c grated cheese

1 1/4 c bread crumbs

Set aside.


Dip fish in:

1 c flour

Then dip fish in egg mixture.

Then dip fish in bread mixture.


Put a little oil in a pyrex dish.

Line the fish in the dish.

Drizzle a little oil over the fish.


Bake covered @ 375 for 10 minutes.

Turn over & bake uncovered for 15 minutes.

Turn over & bake 10 minutes.

If a little soft let stay in a little more.

You should be able to move them around, they should be firm & not sticky.
