From the kitchen of Stephanie Knewasser. These cookies are addictive. This was my
mother's recipe, who got it from Aunt Kay, who got it from her mother. A few years ago I saw
Aunt Kay's recipe and discovered that mine is very different (I have a tendency to change
recipes). Here is Aunt Kay's original recipe as well as the recipe I use.
Kay's Orange Carrot Cookies
Cream:
1/2 c shortening
1 c sugar
1 egg
juice from 1/2 an orange
Sift together & add:
2 c flour
2 tsp baking powder
1/2 tsp salt
Add:
1 c cooked carrots, mashed
Drop spoonfuls onto GREASED cookie
sheet.
Bake @ 350, 10 minutes or until lightly
browned.
Frosting:
1/2 box confectioner sugar
juice of 1/2 fresh orange
Mix together & spread on cookies.
This photo is of my recipe. I used store bought orange
juice to make the frosting instead of fresh squeezed
orange juice & grated rind. They still taste great, but the
frosting has more depth when made with fresh juice and
zest. -Stephanie

1/2 c crisco
1/2 c butter
3/4 c sugar
Add:
1 egg
1 tsp vanilla
1/2 tsp lemon extract
Add:
2 3/4 c flour
2 tsp baking powder
1/2 tsp salt
1 c cooked carrots, mashed
Drop spoonfuls onto GREASED cookie
sheet.
Bake @ 400, 12-15 minutes.
Cool completely.
Frosting:
Combine confectioner sugar with rind
of one orange.
Add orange juice until spreading
consistency.
Don't skip the frosting! It's a different
cookie without it!
