Carrot Cookies



From the kitchen of Kay Putano

These delicious cookies are an Easter favorite. I got this recipe from Mom, who got it from Aunt Kay, who got it from her mother. I've adapted it a little. Here is Aunt Kay's original recipe as well as the recipe I use. - Stephanie



Aunt Kay's





Cream:

1 c shortening

3/4 c sugar

1 egg

Sift together & add:

2 c flour

2 tsp baking powder

1/2 tsp salt

Add:

1 c cooked carrots, mashed

1 tsp vanilla

1/2 tsp lemon extract

Drop spoonfuls onto GREASED cookie sheet.


Bake @ 400, 12 minutes or until lightly browned.


Frosting:

juice of 1/2 fresh orange

grated rind of one orange

confectioner sugar - add to desired consistency




Stephanie's





Cream:

1/2 c crisco

1/2 c butter

3/4 c sugar

Add:

1 egg

1 tsp vanilla

1/2 tsp lemon extract

Add:

2 3/4 c flour

2 tsp baking powder

1/2 tsp salt

1 c cooked carrots, mashed

Drop spoonfuls onto GREASED cookie sheet.


Bake @ 400, 12-15 minutes.

Cool completely.


Frosting:

grated rind of one orange

confectioner sugar

orange juice

Add orange juice until spreading consistency.


Don't skip the frosting! It's a different cookie without it!
