Chicken Piccata

Chicken Piccata is an Italian dish made by dredging thin pieces of chicken in a seasoned flour, then cooking in a butter sauce. It's been a family favorite for a very long time.



Beat:

1 egg

1 Tbsp lemon juice


In separate bowl mix:

1/2 c flour

1/4 tsp garlic powder

1/4 tsp paprika


Dip:

4 boneless chicken breast halves (cut into thin pieces) in egg mixture.

Then dredge in flour mixture.


In a large pan:

1/4 c butter, margarine OR olive oil

coated chicken

When chicken is cooked add to pan:

2 cubes chicken bouillon (2 tsp)

1/2 c boiling water

2 Tbsp lemon juice

Simmer 20 minutes.
