Fish with Cajun Rub & Lime Relish

The original recipe called for Walleye, but we normally use Tilapia



Rinse:

4-6 large walleye, tilapia, or any white fish


Combine:

1 tsp salt

1/2 tsp cayenne

1/2 tsp white pepper

1/2 tsp thyme

1/2 tsp basil

2 tsp garlic powder

1 tsp paprika

1/3 c flour


Dip rinsed fish in milk, dredge in flour mixture.

Over med heat, in a frying pan:

1 Tbsp butter

1 Tbsp oil

Fry coated fish until golden, about 3-4 minutes.

Flip & fry.

Top with Lime Relish.


Lime Relish:

1/2 c sour cream

4 Tbsp parsley

1 Tbsp chives, minced

2 cloves garlic, minced

zest of 1 lime

juice of 1 lime

salt & pepper to taste

dash of tabasco sauce
