Fried Fish

We don't have a boat, but we enjoy fishing. On one of our charters, we were given this recipe by the captain. It's Scott's favorite way for me to prepare fish.



Fish

Milk

egg(s), beaten

Saltines, Ritz or Club Crackers

Salt & Pepper

oil


Put fish in a bowl.

Cover with milk.

Let set while you prepare the rest.


Put crackers in a food processor.

Pulse into crumbs.

Put crumbs in a bowl.

Dip the fish in the egg wash.

Coat in crushed crackers.

Repeat the egg wash and coating of crumbs so the fish is double dipped.

Heat oil in a pan over medium to med-high heat.

Fry the fish until golden.

Turn.

When it flakes easily, it's done.

Season with salt & pepper.
