To remove some of the starch so the rice isn't as sticky, rinse for a minute with cool water:
2 c raw rice
Drain.
In large dry pan or wok, over med heat:
1 zucchini, diced
Occasionally stir. Continue to cook until it starts to char.
Toss with:
drizzle of olive oil
salt & pepper
Remove zucchini from pan, set aside.
Add to empty pan:
4 Tbsp butter
1 c onion, chopped
Cook over medium heat until the onions begin to turn golden, about 5 minutes.
Add:
rinsed rice
Fry, stirring often, for about 5 minutes.
The type of rice you use- brown, white or jasmine- will determine how much liquid you need.
Look at package directions.
Instead of water use:
2 Tbsp soy sauce
chicken broth
Add soy and broth mixture to rice.
Cover.
Cook on low until liquid is absorbed, 15- 20 minutes.
Meanwhile, in a separate pan:
a little oil to prevent sticking
2 eggs
Cook, stirring, until eggs are set.
Chop into small pieces.
Add to cooked rice.
Season with salt & pepper.
