Lemon Bars

A buttery crust is topped with a lemon filling and sliced into bars.



CRUST

Mix on low speed:

1/2 c butter, softened

1 1/3 c flour

1/4 c sugar

Pat into un-greased 8" square pan.

Bake @ 350, 15 - 20 min or until edges brown.


FILLING

2 eggs

3/4 c sugar

2 Tbsp flour

1/4 tsp baking powder

3 Tbsp lemon juice

Mix well.

Pour over baked crust.


Bake @ 350, 18 - 20 min or until set- when touched in center, no indentation should remain.

Cool & refrigerate.

Slice into 16 bars.

Sprinkle confectioner sugar on top.
