Oatmeal Pancakes

I started with Aunt Diomira's Dollar Pancake recipe & made a few changes in an attempt to make them a little healthier. I love them smothered in fruit.



Combine in a bowl:

1 egg

3/4 c milk (I use skim)

3 Tbsp butter, melted

Add:

1/2 c flour

3/4 c ground oatmeal*/ oat flour

2 1/2 tsp baking powder

3 Tbsp sugar

1/2 tsp salt

1 tsp chia seeds (optional)

Beat well until smooth.

Use a spoon to drop a small amount of batter on a heated & oiled pan.

Cook over medium heat.

Flip when edges begin to look dry.

Reduce temperature if they are browning too quickly.


Try them topped with fruit.

- I microwave fresh or frozen strawberries/ blueberries until they begin to juice.

- Apples also make a great pancake topper. Core, skin & slice thin. Microwave until softened.


Drizzle syrup (I use light) over everything & enjoy.


* To make ground oatmeal, put oatmeal in a food processor and pulse until the oatmeal resembles flour. Measure after processing.
