From the kitchen of Stephanie Knewasser. This
batter can be mixed up in a bowl with a spoon.  
Fresh or canned peaches work well.
Mix:
1 egg
1/4 c oil
1 c mik
3 tsp baking powder
1/2 tsp salt
3/4 c sugar
2 c flour
Mix just until combined.

Add:
1 c peaches, chopped

Put batter in lined muffin tins.
Bake @ 400, 15 minutes or until golden.

Makes 16 muffins
